i don't know as far as recomended, but most new players use Guardians since they can wade into combat and be alright. advanced players generally use Sentinels/Consulars, but i really don't know what's more popular.

i'm not sure, but you might mean Sith Lord...Jester loves that one too i also noticed lately that the Watchman/Assassin are the two most underused Prestige classes. for the most part, most of the people i know use Jedi Masters/Sith Lord or Weapon Masters/Marauders...and as i pride myself on being different, i've chosen Watchman B)

I've been experimenting with builds over the weekend and have come to find that i like the Jedi Watchman even better than the Weapon Master B) not only do they get great skills, they also receive excellent saving throws
